"85% of Americans claim to celebrate Christmas, so I don't think it's worth protecting 15% of our population" I am glad you think that the other 15% of the population is not worth much. Not to mention is the 85% of the population are annoyed by a measly 15% then I think they are the ones who have issues.

Secondly, this has already been mentioned, you cannot say and do and say whatever you want at work because no matter what people still get offended by the most miniscule things. Happy Holidays or Merry Christmas, unfortunately people never grow up and then it is the companies that are forced to deal with it.

I don't know what kind of Target you shop at but I can easily find Christmas cards and other products at the two Target locations where I live.
