Maybe I was being a bit over dramatic, but....

1. re: onion soup, what can I say, my husband loves the flavor of onion soup and just hates the pieces of onion. Many restaurants have done this for him. If they would have said it wasn't possible, it would have been fine. Saying I thought you were joking and we dont do that here, is not what you say to a customer. There is a nice way to say things.
2. I did not expect at all to be treated like a queen, but I do expect wait staff to earn their tip, by being courteous and well mannered,just the same as the patrons speak to them, not kiss my feet!! I do believe that a simple no problem, sorry or just a polite way of correcting the issue goes a long way. If the explanations came with kind words, of correcting the issue that is all that we expected.
My complaint with Red, is not the food. It's with their customer relations. At over $80.00 plus gratuity per person, we should not have left feeling like we were treated like children using daddy's money for a fancy night out.
